Re-evaluate the schema for categories

The current schema for categories is optimized for speed but at the cost of redundant/duplicated data in the Json objects. There is a trade-off between performance vs data integrity(/maintainability). Other schema options emphasizing data integrity should be evaluated and performance tests run on both. If the performance hasn't significantly degraded then the date-integrity option should be used instead.
