Mac: Make -universal configure option behavior dependent on -carbon and -cocoa

      At the moment -universal is equivalent to "x86 ppc", which is the right thing for a carbon build.
      For a cocoa build it would make more sense to make it equivalent to "x86_64 x86" instead.
