Figure out and add missing CI CMake configs that mirror qmake non-Packaging ones

    Description

      Currently most of the Packaging configurations are already there (missing Android ones).

      But we also have non-Packaging qmake configurations which should probably be replicated with CMake ones, so we don't lose some coverage.

      Investigate and add what's missing.

      Organization wise, probably makes sense to move the packaging ones into a cmake_packaging_configs.yaml, and the non packaging ones into cmake_coverage_configs.yaml or something like that.
