The Application Signature part of the "Build Android APK" allows to chose/create a keystore file, selecting a certificate alias and enabling/disabling the signing of a package.

A chosen keystore file is persistent until the next loading of the project. The boolean value "Sign package" and the string "Certificate alias" are empty.
