With Qt 5.12 docking an undocked window is very hard in Windows. The dock area where to drop the window doesn't usually expand like it does with 5.11 or even with 5.12 on MacOS. Instead you need to drop the window precisely on to correct spot to get it dock. Can be easily reproduced at least with Dock Widgets example on Windows 10 when building with Qt 5.12.
